Dairy-Free Alfredo Sauce

This Alfredo sauce is so good. It tastes just like the Alfredo sauce you get at a nice Italian restaurant creamy, cheesy with just a hint of garlic. 
However this recipe is dairy free.  That's right, no butter, no cheese, no cream.  It also has a secret ingredient in it that will blow your mind. I promise, you will not be able to tell it's in there.
What is is?
Would you believe me if I told you this sauce is made up mostly of cauliflower?
It's true.  I fooled my husband and all 6 of my children into thinking they were eating a jar of store bought Alfredo sauce. Little did they know they were getting a huge serving of veggies.

 *insert evil laugh here*

Trust me.  You have got to try this recipe out for yourself.  You won't be disappointed.
Dairy-Free Alfredo Sauce
yields 4 cups

1 (16oz) package frozen cauliflower or 1 head fresh cut into florets
2 cups chicken or vegetable broth
6 cloves garlic, minced
2 tablespoons olive oil or Ghee
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup milk (I used unsweetened cashew milk)

Steam cauliflower in broth until fork tender. Remove cauliflower and reserve the broth. Saute garlic in oil or ghee 1-2 minutes. In blender, blend cauliflower florets, garlic-oil mixture, 1 cup of reserved broth, salt, pepper, and milk until smooth.

Serve over noodles, zoodles, vegetables, meatballs, or in your favorite casserole.
