Homemade Cashew Butter

I love making my own nut butters. If you own a high-speed blender or a food processor you can make your own too.  I've used both a food processor and a Blendtec blender.  My preference is the Blendtec's twister jar.
You don't need to continually scrape down the sides, plus it whips up in about half the time of the food processor.
This is butter is made with cashews, but you can use any kind of nut or a combination of several.
Homemade Cashew Butter

2 cups cashews*
3 dates, pitted
1/8 tsp cinnamon
1-3 tablespoons coconut oil

Soak dates in hot water  for a few minutes to soften. Place nuts, dates, and cinnamon in blender or food processor.  Blend on high, pausing occasionally to scrape down the sides, until nuts are broken down into crumbs size pieces.  Add oil starting with 1 tablespoon. Continue blending. Add more oil if needed until you reach a smooth silky consistency.
