Creamy Tomato Basil Soup


My family loves tomato soup. I ran across a recipe for homemade soup from @wholemeg on Instagram.  I made a few changes to her recipe, and this soup was born.


I love that it's chock full of fresh vegetables.

It can be made on the stove top or in a slow cooker


Creamy Tomato Basil Soup
Recipe adapted from @wholemeg

1 cup diced celery
1 cup diced peeled carrots
1 cup diced yellow onion
4-1/2 cups chicken or veggie broth, seperated
2 (15 oz) cans diced tomatoes
3/4 cup full-fat coconut milk
1 bay leaf
1 tablespoon dried basil
1 teaspoon garlic powder
1 tablespoon onion powder
1/2 teaspoon mustard powder
salt and pepper to taste

Add celery, carrots, onion, broth, tomatoes, bay leaf, and seasonings to a crock-pot. Cook low 6-8 hours or High 4-5.  Remove bay leaf. Add coconut milk. Add 1/2 cup more more broth and blend with an immersion blender. Add more broth if you want a smoother texture. Taste and add more seasonings if needed.
