Cilantro Lime Cauli-RIce



Confession Time: I have a small obsession with a certain Mexican Grill chain. I've been trying to recreate my favorite dish from there, the Sweet Pork Barbacoa salad. It's something I really missed when I changed my diet.  One of the things I've successfully been able to duplicate is their cilantro lime rice.

To make this whole30 approved I substituted riced cauliflower for the rice.  If I may say so myself, it tastes pretty darn close to the real thing.  I love this "rice" by itself or as a side.

Cilantro Lime Cauli-Rice
Serves 6

2 lbs cauliflower rice
(see HERE for step by step instructions)
zest of 1 lime
juice of 1 lime
3/4 teaspoon sea salt
1/4 teaspoon cumin
1 tablespoon extra-virgin olive oil
2 tablespoons finely chopped cilantro

Combine first 6 ingredients together in a large bowl. Stir well to incorporate. Spread into a thin, even layer on a baking sheet.  Roast at 450 degrees for 15-20 minutes, stirring rice halfway through cooking time. Once the rice begins to brown, remove from oven. Top with cilantro and serve.
