Blackened Chicken

Rubs- who doesn't like them? They turn boring meat into a party in your mouth!
This rub has become one of my new favorites.  It's made with common spices you probably already have in your pantry -salt, black pepper, cayenne pepper, onion powder, and cumin.
You mix all the spices together
massage them into your chicken. I cut my chicken breasts down into tenders so they would cook faster.
and then cook!
I served this last time over Cilantro Lime Cauli-Rice (recipe HERE). Mmmm, is your mouth watering yet?  Mine is.

Blackened Chicken 
Serves 6

6 chicken breasts
1 tsp smoked paprika
1/2 tsp sea salt
1/2 tsp black pepper
1/2 tsp onion powder
1/2 tsp cumin
1/4 - 1/2 tsp cayenne pepper 
(if you like it hot, add a lot)
2 tbs avocado oil

Mix all the spices together.  Massage rub into both sides of your chicken breasts.
*Heat oil in a large cast iron skillet, over medium-high heat. Cook chicken in oil 8-10 minutes per side with a lid on, until cooked through.


*Could also be barbecued, baked, or broiled instead.
